Over the fire
Orkney beef sirloin
£36
Dry aged 35 days and seared over oak embers, finished with bone marrow butter.
Restaurant & grill, Glasgow
Ember & Oak cooks the best of Scotland over a single oak fire, two minutes from George Square. Orkney beef, Shetland mussels and Loch Fyne langoustines, with a proper Sunday roast to finish the week.
Lit at 7am, every day we open
One fire, no gas
Ember & Oak sits on a quiet wynd between George Square and the Trongate. There is no gas line in our kitchen. Every plate, from a lunchtime flatbread to a 35-day aged Orkney sirloin, is cooked over Scottish oak and the embers it leaves behind.

From field to fire
Scroll the journey. Every route ends in our kitchen on Cooper's Wynd, and we know every farmer, fisher and cheesemaker by name.
01 / Shetland340 miles to the fire
Grown on ropes in clean, cold voes and shipped overnight from Lerwick. They reach the kitchen less than 36 hours out of the water.
02 / Orkney270 miles to the fire
Native-breed cattle raised slowly on island pasture. We buy whole sides, dry age them for 35 days and use every cut, from tomahawk to tartare.
03 / Isle of Mull120 miles to the fire
Raw-milk cheddar with a sharp, grassy bite. It goes on the flatbreads, the baked potatoes and the cheeseboard.
04 / Loch Fyne60 miles to the fire
Creel-caught langoustines and hand-dived scallops from Argyll, landed in the morning and on the grill by dinner.
05 / Perthshire65 miles to the fire
Soft fruit from the Tay valley for the cranachan, and wild venison from estates that manage their herds for the hillside's sake.
06 / Ayrshire35 miles to the fire
Outdoor-reared pork and sandy-soil potatoes from farms south of the city, close enough that we visit in person.
Overheard at the counter
The langoustines alone are worth the trip into Merchant City. Smoky, sweet and gone in seconds.
